Pumpkin roll
Ingredients/Components
- sugar - 1 c
- cinnamon - 2 tsp
- eggs - 3 item
- vanilla - 1 tsp
- flour - 3/4 c
- baking powder - 1 tsp
- pumpkin - 2/3 c
- chopped nuts optional - 1 c
- powdered sugar - 1 c
- margarine - 4 Tbsp
- lemon juice - 1 tsp
- Add the sugar, pumpkin and lemon juice
How to make pumpkin roll:
Cream together until fluffy the eggs. Add the sugar, pumpkin and lemon juice. Mix well, then fold in the flour, baking powder and cinnamon. Mix well. Pour into greased jelly roll pan (grease pan, then cover with wax paper and grease again). Sprinkle with chopped nuts (optional). Bake at 375° for 15 minutes. Loosen edges and put onto powdered sugar towel while warm. Take waxed paper off and sprinkle generously with powdered sugar. Turn over and sprinkle other side with powdered sugar. Roll in towel from underside. Let cool.Filling:8 oz. cream cheese1 c. powdered sugar1 tsp. vanilla4 Tbsp. margarine Whip until creamy. Unroll cake and spread filling. Roll again.
