Pumpkin roll
Ingredients/Components
- sugar - 1 c
- cinnamon - 1 tsp
- cream cheese
- eggs - 3 item
- vanilla - 1/2 tsp
- salt - 1/2 tsp
- chopped nuts - 1 c
- flour - 3/4 c
- nutmeg - 1/2 tsp
- baking powder - 1 tsp
- pumpkin - 2/3 c
- powdered sugar - 1 c
- margarine - 4 Tbsp
- lemon juice - 1 tsp
How to make pumpkin roll:
Filling:1 (8 oz.) cream cheese4 Tbsp. margarine1/2 tsp. vanilla1 c. powdered sugar Beat eggs at high speed for 5 minutes. Gradually beat in sugar. Stir in pumpkin and lemon juice. Mix in cup flour, baking powder, cinnamon, nutmeg and salt. Add to pumpkin mixture. Grease and flour a 15 x 10-inch pan. Line with wax paper and grease. Pour mixture into prepared pan, top with nuts and bake at 375° for 15 minutes. Turn out on towel and roll like a jelly roll. Cool 1/2 hour.Prepare filling. Beat all ingredients together. Unroll cake. Spread on filling and re-roll. Slice about 1/2-inch thick.
