- cream cheese - 1 (8
- eggs - 3 item
- vanilla - 1 tsp
- butter or margarine - 4 Tbsp
- flour - 3/4 c
- nutmeg - 1/2 tsp
- soda - 1 tsp
- pumpkin - 2/3 c
- powdered sugar
- ginger - 1 tsp
- lemon juice - 1 tsp
- nuts, chopped English walnuts - 1/4 c
How to make pumpkin roll:
Filling:1 c. powdered sugar1 (8 oz.) cream cheese1 tsp. vanilla4 Tbsp. butter or margarine Beat eggs at high speed for 1 minute; add sugar, lemon juice, spices and soda. Fold in pumpkin and flour. Spread on well-greased cookie sheet and sprinkle nuts. Bake for 20 minutes at 375°.Turn out on towel and sprinkle with powdered sugar. Roll inside of roll to cool. When cool, unroll and spread the filling. Roll back up. Keep refrigerated.
Filling: Beat ingredients well and spread on roll.
