Ingredients/Components
- sugar - 1 c
- cinnamon - 2 tsp
- cream cheese
- eggs - 3 item
- vanilla - 1/2 tsp
- salt - 1/2 tsp
- flour - 3/4 c
- butter - 4 Tbsp
- nutmeg - 1/2 tsp
- baking powder - 1 tsp
- pumpkin - 2/3 c
- powdered sugar - 1 c
- ginger - 1 tsp
- lemon juice - 1 tsp
- crushed nuts - 1 item
How to make pumpkin roll:
Filling:6 oz. cream cheese1 c. powdered sugar4 Tbsp. butter1/2 tsp. vanilla Mix and chill filling. Beat eggs at high speed for 5 minutes; gradually add sugar. Fold in pumpkin. Add lemon juice. Sift flour and fold into batter. Add all other ingredients. Pour into greased cookie sheet and sprinkle with nuts. Bake at 375° for 15 minutes. Pour powdered sugar on kitchen towel. Turn cake into towel while hot and roll up. When cool, unroll and spread with filling; roll again. Wrap in wax paper and refrigerate. Sprinkle with powdered sugar before serving.
