Ingredients/Components
- cinnamon - 2 tsp
- brown sugar - 1/2 c
- nutmeg - 1/2 tsp
- baking powder - 1 Tbsp
- egg whites - 2 item
- ginger - 1/2 tsp
- raisins - 3/4 c
- rolled oats - 1 c
- skim milk
- oat bran
- whole wheat flour - 3/4 c
- fresh or canned pumpkin - 3/4 c
- olive oil or canola oil - 2 tsp
How to make pumpkin oat muffins:
Preheat oven to 400°. Combine bran, oats and milk. Set aside. Combine flour, brown sugar, baking powder and spices separately. Blend pumpkin with egg whites, oil and raisins. Add to bran. Add dry ingredients and stir until moist. Spray 12 muffin tins with Pam. Bake 20 to 25 minutes until light brown.Recipe categories: Breads, Quick breads, Muffins.
