Ingredients/Components
- eggs - 3 item
- sugar - 1 c
- pumpkin - 2/3 c
- lemon juice - 1 tsp
- flour - 3/4 c
- cinnamon - 2 tsp
- baking powder - 1 tsp
- ginger - 1 tsp
- nutmeg - 1/2 tsp
- salt - 1/2 tsp
- chopped nuts - 1 c
- Gradually add the sugar
- softened cream cheese - 6 oz
- butter, softened - 1/4 c
- vanilla - 1 tsp
How to make pumpkin nut roll:
Beat the eggs on high speed with an electric mixer for 5 minutes. Gradually add the sugar. Blend in the pumpkin and lemon juice. Stir together, then blend in the flour, cinnamon, baking powder, ginger, nutmeg and salt. Spread batter in a greased and floured jelly roll pan. Sprinkle with the nuts. Bake at 375° for 15 minutes. Turn out onto a towel that has been covered with powdered sugar. Roll and cool.Filling:1 c. powdered sugar6 oz. softened cream cheese1/4 c. butter, softened1 tsp. vanilla Beat together the powdered sugar, cream cheese, butter and vanilla until smooth and creamy.
