Ingredients/Components
- sugar - 1 c
- cinnamon - 1/2 tsp
- eggs - 3 item
- vanilla
- flour - 3/4 c
- baking soda - 1 tsp
- pumpkin - 2/3 c
- soft butter - 2 Tbsp
- 10x powdered sugar - 1 c
- Line with wax paper
How to make pumpkin cake roll:
Grease cookie sheet, 10 x 15 x 2-inch. Line with wax paper. Grease paper. Preheat oven to 350°. Beat until creamy the eggs and sugar. Add pumpkin, soda, cinnamon and flour. Pour batter on cookie sheet. Sprinkle with chopped nuts if desired. Bake at 350° for 15 minutes. Sprinkle powdered sugar on tea towel. Remove cake from oven and flip on towel. Remove wax paper. Roll in log shape and set aside to cool for 1 1/2 hours.Filling:8 oz. cream cheese1 c. 10x powdered sugar1 1/2 tsp. vanilla2 Tbsp. soft butter Cream all of these together. Spread filling on unrolled cake, removing towel as you unroll it. Wrap in foil and refrigerate. Can be frozen.Recipe categories: Desserts, Cakes, < 15 mins.
