Ingredients/Components
- sugar - 2 c
- cinnamon - 2 tsp
- chopped pecans - 1 c
- salt - 1 tsp
- flour - 3 c
- coconut - 1 c
- oil - 1 c
- soda - 1 tsp
- baking powder - 2 tsp
- raisins - 1 c
- cloves - 1 tsp
- beaten eggs - 4 item
- small cans pumpkin - 2 item
How to make pumpkin cake:
Sift together dry ingredients. Mix eggs, sugar, oil and pumpkin well. Add dry ingredients, mixing in a large bowl by hand with spoon. Pour into well-greased tube pan. Bake 1 hour at 350°.Cool on rack 10 minutes before turning out onto plate. Put cut apples in center to keep cake moist. Keep in a cool place. This cake freezes real well.
