Pumpkin cake

Ingredients/Components

• sugar - 2 c
• cinnamon - 2 tsp
• chopped pecans - 1 c
• salt - 1 tsp
• flour - 3 c
• coconut - 1 c
• oil - 1 c
• soda - 1 tsp
• baking powder - 2 tsp
• raisins - 1 c
• cloves - 1 tsp
• beaten eggs - 4 item
• small cans pumpkin - 2 item

How to make pumpkin cake:

Sift together dry ingredients. Mix eggs, sugar, oil and pumpkin well. Add dry ingredients, mixing in a large bowl by hand with spoon. Pour into well-greased tube pan. Bake 1 hour at 350°.

Cool on rack 10 minutes before turning out onto plate. Put cut apples in center to keep cake moist. Keep in a cool place. This cake freezes real well.
