Potato bread
Ingredients/Components
- salt - 1/4 tsp
- baking powder
- all-purpose flour
- pepper - 1/8 tsp
- scallions, sliced - 4 item
- butter or margarine, at room temperature - 6 Tbsp
- mashed potatoes, chilled*
How to make potato bread:
*Use leftover mashed potatoes or frozen or instant made without the butter and salt.Preheat oven to 425°. Lightly grease baking sheet; set aside. In large bowl, combine flour, baking powder, salt and pepper. With pastry blender or 2 knives, cut in butter until coarse crumbs. Stir in mashed potatoes and scallions to make a soft dough. On lightly floured surface, knead dough 3 to 4 minutes. With rolling pin, on lightly floured surface, roll dough 1/4-inch thick. With 3 1/2-inch round cookie cutter or glass, cut into rounds. With metal spatula, transfer to prepared baking sheet.
Bake 25 minutes until golden brown. Cool on wire rack 5 minutes. Serve warm.
