  • salt - 2 tsp
  • flour - 2 Tbsp
  • pepper - 1/4 tsp
  • tomato juice - 1/2 c
  • Lipton beefy onion soup - 1 pkg
  • sugar to help browning - 1/2 tsp

How to make pot roast of beef:

Mix first 4 ingredients together and pat into surface of 4 to 5 pound piece of beef (chuck, shoulders, rump or round). Heat a deep, heavy pan over high heat, greasing lightly with shortening. Put in meat and brown thoroughly on all sides. Cook with the meat 1 package Lipton beefy onion soup mix with liquid. When meat is a deep, dark brown add tomato juice. Put on cover and simmer very slowly (about 3 to 4 hours). During last hour add cut potatoes and carrots.
