Ingredients/Components

  • salt - 1/2 tsp
  • minced onion - 1 tsp
  • uncooked rice - 1/2 c
  • ground round steak - 1 lb
  • tomato puree or soup - 1 to

How to make porcupines:

Mix uncooked rice and meat with the seasonings. Shape into small balls. Place in deep baking dish and cover with the tomato puree. (A bay leaf, a small amount of onion, salt and pepper may be needed to season the tomato puree.) Bake at 350° for 60 to 80 minutes. Makes approximately 6 servings.

By using the uncooked rice, a porcupine effect is assured. During the cooking process the rice swells and sticks out of the beef balls.
