Polynesian cake
Ingredients/Components
- sugar - 2 c
- cinnamon - 2 tsp
- eggs - 3 item
- vanilla - 2 tsp
- salt - 1 tsp
- chopped nuts - 1 c
- coconut - 1 pkg
- baking soda - 2 tsp
- unsifted flour - 2 c
- shredded carrots - 2 c
- corn oil
- can crushed pineapple, juice and all - 1 oz
How to make polynesian cake:
Combine all ingredients and mix by hand. Do not overbeat. Pour into ungreased 9 x 13-inch pan. Bake at 350° for 60 minutes. Instead of raw carrots, may use 2 jars of Junior baby food carrots. Top with frosting.Recipe categories: Desserts, Cakes, < 60 mins.
