  • cinnamon - 2 tsp
  • eggs - 3 item
  • vanilla - 2 tsp
  • salt - 1 tsp
  • chopped nuts - 1 c
  • flour
  • grated carrots - 1 c
  • flaked coconut - 1 c
  • baking soda - 2 tsp
  • egg whites - 2 item
  • powdered sugar - 2 c
  • salad oil
  • crushed pineapple, drained - 1 c
  • Frosting:1 stick margarine
  • coconut to sprinkle on top - 1 item

How to make polynesian cake:

Frosting:1 stick margarine2 c. powdered sugar2 egg whites1 tsp. vanilla coconut to sprinkle on top Place oil, eggs and sugar in very large bowl. Beat well. Stir flour, soda, salt and cinnamon into egg mixture until well blended. Fold in vanilla, carrots, pineapple, coconut and nut meats. Mix well. Pour into greased, floured 9 x 13 x 2-inch pan, or sheet cake pan. Bake 45 to 50 minutes at 350° until done. Cool.

Cream frosting ingredients. Spread on cool cake. Sprinkle with coconut. Serve fresh. Does not keep well, but can be frozen.
