Ingredients/Components

  • chopped nuts - 1/2 c
  • water - 3/4 c
  • chopped dates
  • rolled oats - 1 c
  • applesauce - 2/3 c
  • crushed pineapple, undrained - 2 c
  • vanilla optional - 1 tsp
  • unsweetened fine coconut - 3/4 c
  • millet flour * - 1 c

How to make polynesian bars:

Filling:4 c. chopped dates2 c. crushed pineapple, undrained3/4 c. water1 tsp. vanilla (optional) Mix all topping ingredients with hands to make a crumb mixture. Press half into the bottom of a 9 x 13-inch baking pan. Reserve half to place on top of filling.

Combine all filling ingredients and cook until thick and smooth. Spread on the bottom crust to the edges of the pan, completely covering. Add remaining crumbs over the filling and pat down well. Bake at 350° for 30 minutes. Cool and cut into squares.

*Make millet flour by whizzing 3/4 cup dry portions of millet in blender.
