Polynesian bars
Ingredients/Components
- vanilla - 1 tsp
- chopped nuts - 1/2 c
- water - 3/4 c
- chopped dates
- applesauce - 2/3 c
- crushed pineapple - 2 c
- oats - 1 c
- millet flour - 1 c
- unsweetened fine coconut - 3/4 c
How to make polynesian bars:
Filling:2 c. chopped dates2 c. crushed pineapple3/4 c. water1 tsp. vanilla Topping: Make millet flour by whizzing 3/4 cup dry portions of millet in blender. Mix flour, oats, applesauce, coconut and nuts together with hands to make a crumb mixture. Press half into bottom of 9 x 13-inch baking pan.Combine filling ingredients and cook until thick and smooth. Spread over crumb mixture. Add remaining crumbs over filling and pat down well. Bake at 350° for 30 minutes. Cool and cut into squares.
If you have limited time, use granola instead of the topping. This would not need baking.
