Ingredients/Components

  • vanilla - 1 tsp
  • chopped nuts - 1/2 c
  • water - 3/4 c
  • chopped dates
  • applesauce - 2/3 c
  • crushed pineapple - 2 c
  • oats - 1 c
  • millet flour - 1 c
  • unsweetened fine coconut - 3/4 c

How to make polynesian bars:

Filling:2 c. chopped dates2 c. crushed pineapple3/4 c. water1 tsp. vanilla Topping: Make millet flour by whizzing 3/4 cup dry portions of millet in blender. Mix flour, oats, applesauce, coconut and nuts together with hands to make a crumb mixture. Press half into bottom of 9 x 13-inch baking pan.

Combine filling ingredients and cook until thick and smooth. Spread over crumb mixture. Add remaining crumbs over filling and pat down well. Bake at 350° for 30 minutes. Cool and cut into squares.

If you have limited time, use granola instead of the topping. This would not need baking.
