Polynesian chicken
Ingredients/Components
- cornstarch - 2 tsp
- oil - 2 tsp
- soy sauce - 1 tsp
- chicken broth - 3/4 c
- chopped onions - 1/2 c
- salt and pepper to taste - 1 item
- teriyaki sauce - 1 tsp
- garlic clove - 1 item
- thinly sliced carrot - 1/2 c
- thinly sliced mushrooms - 1/2 c
- Chinese pea pods - 1/2 c
- thinly sliced green bell pepper - 1/2 c
- skinless, cooked chicken - 8 oz
- pineapple chunks, drain and reserve juice - 1 c
How to make polynesian chicken:
Heat oil in skillet; add garlic and saute. Add carrot, pepper, mushrooms and pea pods; stir-fry 3 to 5 minutes. Add chicken, onions, teriyaki and soy sauce. Cook just until heated through. Add broth and bring to a boil; stir in pineapple. Dissolve cornstarch in reserved juice. Add to skillet and cook, stirring constantly, until mixture is thickened. Season with salt and pepper.
