Ingredients/Components

  • cornstarch - 2 tsp
  • oil - 2 tsp
  • soy sauce - 1 tsp
  • chicken broth - 3/4 c
  • chopped onions - 1/2 c
  • salt and pepper to taste - 1 item
  • teriyaki sauce - 1 tsp
  • garlic clove - 1 item
  • thinly sliced carrot - 1/2 c
  • thinly sliced mushrooms - 1/2 c
  • Chinese pea pods - 1/2 c
  • thinly sliced green bell pepper - 1/2 c
  • skinless, cooked chicken - 8 oz
  • pineapple chunks, drain and reserve juice - 1 c

How to make polynesian chicken:

Heat oil in skillet; add garlic and saute. Add carrot, pepper, mushrooms and pea pods; stir-fry 3 to 5 minutes. Add chicken, onions, teriyaki and soy sauce. Cook just until heated through. Add broth and bring to a boil; stir in pineapple. Dissolve cornstarch in reserved juice. Add to skillet and cook, stirring constantly, until mixture is thickened. Season with salt and pepper. Serve with hot cooked rice!
