Ingredients/Components

  • sugar - 1 c
  • salt - 1/4 tsp
  • flour - 2 c
  • brown sugar - 1 c
  • baking powder - 2 tsp
  • shortening - 1/2 c
  • well beaten eggs - 2 item
  • pineapple juice from can - 3/4 c
  • can Dole pineapple rings in its own juice reserve juice - 1 item
  • few maraschino cherries optional - 1 item

How to make pineapple upside-down cake:

A cast-iron skillet works the best!

In bowl, cream together the shortening and sugar. Add the two well beaten eggs to cream mixture. In another bowl, sift flour, baking powder and salt. Add to cream mixture, alternating with 3/4 cup of pineapple juice. Mix well. Simmer in 9-inch cast-iron skillet, 4 tablespoons of butter and 1 cup brown sugar. Spread over skillet evenly. Arrange the pineapple rings on top of brown sugar. Place cherry inside each ring. Pour batter over all. Bake at 350° for 50 minutes. Turn out on plate immediately by inverting skillet with plate on top.

This recipe was given to my aunt during World War II. On the recipe card, she typed, "Where in the world do you get pineapple with ration coupons?"
