Ingredients/Components

  • sour cream - 1 item
  • salt - 1 tsp
  • flour - 2 c
  • melted butter - 1 item
  • vegetable oil - 1/2 c
  • egg - 1 item
  • pepper to taste - 1 item
  • large onion, chopped - 1 item
  • cool water - 2/3 c
  • large potatoes, cooked - 4 item

How to make pierogies:

Mix flour with salt. Add egg and water. Knead lightly. Cover dough with towel and set aside. Saute onion in vegetable oil; mash potatoes. Add onion to potatoes and mix well. Season with salt and pepper to taste. Cool. Roll dough thin. Cut into rounds with water glass. Hold round in palm of hand; place spoonful of filling in center. Fold in half. Press edges to seal; place on dry towel and cover.

In a large pot of boiling water, gently drop 10 pierogies, a few at a time. Gently simmer, do not boil, for about 4 minutes or until they float on top. Occasionally stir gently. Lift out into colander and rinse. Coat with melted butter. Keep hot and serve with sour cream. Makes about 48 pierogies.
