  • vanilla extract - 1 Tbsp
  • salt - 1/2 tsp
  • butter - 1 c
  • baking powder - 1/2 tsp
  • baking soda - 2 tsp
  • boiling water - 2 c
  • heavy cream - 1/2 c
  • unbleached flour
  • powdered sugar - 1/4 c
  • unsweetened cocoa - 1 c
  • powdered sugar, sifted
  • Butter and flour three 9-inch round cake pans
  • Spread the filling between layers and frosting on top

How to make perfect chocolate cake:

Preheat oven to 350°. Butter and flour three 9-inch round cake pans. Combine the cocoa with boiling water, stirring until smooth. Cool completely. Sift together the dry ingredients. In a large bowl, beat together the butter, sugar, eggs and vanilla. Add the dry ingredients alternately with the cocoa mixture to the creamed mix. Do not over mix. Blend just enough to moisten the dry ingredients. Pour the batter into the pans. Bake for 25 to 30 minutes. Cool in pans for 10 minutes and remove and cool completely.Filling:1 c. heavy cream1/4 c. powdered sugar1 Tbsp. vanilla extract Whip all the filling ingredients until stiff. Spread the filling between layers and frosting on top.Frosting:6 oz. unsweetened baking chocolate1 c. butter1/2 c. heavy cream2 1/2 c. powdered sugar, sifted In a medium pan, melt chocolate and butter. Stir in cream until smooth. Remove from heat and place in ice. Beat in the powdered sugar until stiff. Chill.

Serve immediately or store in refrigerator.
