Peppermint cookies
Ingredients/Components
- sugar - 1/2 c
- eggs - 2 item
- packed brown sugar - 1/2 c
- vanilla extract
- salt - 1 tsp
- all purpose flour
- baking soda - 1/2 tsp
- shortening - 1 c
- crushed peppermint candies - 1/2 c
How to make peppermint cookies:
In a mixing bowl, cream shortening and sugars. Add the eggs, one at a time. Beat in vanilla and stir in dry ingredients. Stir in crushed candies. Shape into a 15 inch roll; wrap in plastic wrap and put in refrigerator for 4 hours. Unwrap and cut into 1/8 slices. Place 2 inches apart on ungreased baking sheets and bake at 375° for 6-8 minutes.
