Ingredients/Components

  • hot cooked rice - 3 c
  • lean stir-fried beef - 1 lb
  • paprika - 1 Tbsp
  • butter or margarine - 2 Tbsp
  • cloves crushed garlic - 2 item
  • beef broth
  • sliced green onion, including tops - 1 c
  • green peppers, cut in strips - 2 item
  • cornstarch - 2 Tbsp
  • water - 1/2 c
  • soy sauce - 1/2 c
  • large fresh tomatoes, cut in eighths - 2 item
  • can mushrooms optional - 1 item

How to make pepper steak with rice:

While rice is cooking, sprinkle meat with paprika and allow to stand while preparing other ingredients.

Using a large skillet, brown meat in butter. Add garlic and broth (and mushrooms). Cover and simmer for at least 30 minutes to 1 hour. Stir in onion and green peppers. Cover and cook 5 minutes.

Blend cornstarch, water and soy sauce. Stir into meat mixture. Cook, stirring, until clear and thickened, about 2 minutes. Add tomatoes and stir gently. Serve over rice. Serves 6.
