Pepper steak with rice
Ingredients/Components
- hot cooked rice - 3 c
- lean stir-fried beef - 1 lb
- paprika - 1 Tbsp
- butter or margarine - 2 Tbsp
- cloves crushed garlic - 2 item
- beef broth
- sliced green onion, including tops - 1 c
- green peppers, cut in strips - 2 item
- cornstarch - 2 Tbsp
- water - 1/2 c
- soy sauce - 1/2 c
- large fresh tomatoes, cut in eighths - 2 item
- can mushrooms optional - 1 item
How to make pepper steak with rice:
While rice is cooking, sprinkle meat with paprika and allow to stand while preparing other ingredients.Using a large skillet, brown meat in butter. Add garlic and broth (and mushrooms). Cover and simmer for at least 30 minutes to 1 hour. Stir in onion and green peppers. Cover and cook 5 minutes.
Blend cornstarch, water and soy sauce. Stir into meat mixture. Cook, stirring, until clear and thickened, about 2 minutes. Add tomatoes and stir gently. Serve over rice. Serves 6.
