  • butter or margarine - 1/3 c
  • unbaked 9-inch pastry shell - 1 item
  • all-purpose flour - 1/2 c
  • lemon juice - 2 tbsp
  • ground cinnamon - 1/2 tsp
  • grated lemon peel - 1/2 tsp
  • ground coriander - 1/4 tsp
  • sugar, divided - 1 c
  • vanilla ice cream optional - 1 item
  • ground mace - 1/4 tsp
  • sliced, peeled ripe pears - 6 c

How to make pear pie:

In a bowl, combine 1/2 cup sugar, lemon juice, peel and coriander. Add pears and toss. Spoon into pie shell. In a bowl, combine flour, cinnamon, mace and remaining sugar; cut in butter until mixture resembles coarse crumbs. Sprinkle over pears. Bake at 400° for 45 minutes or until pears are tender. Serve warm or cold with ice cream, if desired. Yields 6 to 8 servings.
