Ingredients/Components
- sugar - 1 c
- vanilla extract
- flour - 2 Tbsp
- butter - 1 Tbsp
- cornstarch - 3 Tbsp
- water - 1 c
- egg yolks - 3 item
- baking powder - 1/2 tsp
- powdered sugar - 1 c
- peanut butter - 1/4 c
- can evaporated milk - 1 oz
- baked pie shell - 1 item
- Meringue - 1 item
- Cook over low heat until thick, to a pudding-like consistency
How to make peanut butter pie:
In a saucepan, combine the sugar, cornstarch, flour, milk, water and egg yolks; mix well. Cook over low heat until thick, to a pudding-like consistency. Stir in vanilla and butter. In a medium size mixing bowl, blend powdered sugar and peanut butter until it resembles cornmeal. Sprinkle 3/4 of the mixture into bottom of baked pie shell; reserve the remaining 1/4. Add the filling and top with meringue. Sprinkle meringue with reserved crumb mixture and bake in a 300° oven until brown. Let sit 1 hour before serving. Store in refrigerator.Meringue:3 egg whites1/4 to 1/3 c. sugar1/2 tsp. baking powder Beat the egg whites at room temperature until soft peaks form. In a separate bowl, combine the sugar and baking powder. Gradually add to egg whites, beating until the whites stand in stiff peaks.
