Ingredients/Components

  • sugar
  • water - 1/2 c
  • soda - 1 tsp
  • white Karo syrup - 1/2 c
  • salted Spanish peanuts not raw peanuts

How to make peanut brittle:

Heat oven to 250°. Put peanuts in pie tin in oven while syrup is cooking.

In cast-iron skillet, cook sugar, syrup and water until it starts to turn amber. Stir in peanuts and add soda. Stir fast and pour into greased jelly roll pan. Spread quickly and allow to cool.

Tips: Measure soda in advance. Be quick to stir in peanuts and spread fast. Have pan of soapy water to drop pan in.
