Ingredients/Components
- large eggs - 8 item
- plus 2 Tbsp - 1 c
- bleached all-purpose flour - 1 c
- baking powder - 1 tsp
- salt - 1/8 tsp
- pure vanilla extract - 1 tsp
- plus 2 tsp - 2 Tbsp
- For the Filling Makes about 2 1/2 Cups:5 large egg yolks
- cornstarch - 3/4 c
- heavy cream
- sugar
- unsalted butter
- light brown sugar - 1/2 c
- ground cinnamon - 1/8 tsp
- medium-size fresh peaches, peeled, pitted and cut into 1/2-inch wedges - 4 item
- light rum - 1/4 c
- sweetened whipped cream
- sprigs fresh mint - 8 item
- confectioners sugar - 1 item
How to make peaches and cream jelly roll:
For the Filling (Makes about 2 1/2 Cups):5 large egg yolks3/4 c. cornstarch2 1/2 c. heavy cream1 1/2 c. sugar For the Peaches:2 Tbsp. unsalted butter1/2 c. light brown sugar1/8 tsp. ground cinnamon4 medium-size fresh peaches, peeled, pitted and cut into 1/2-inch wedges1/4 c. light rum To Finish:1 c. sweetened whipped cream8 sprigs fresh mint confectioners sugar For the Cake: Preheat the oven to 350°. Beat the eggs and 1 cup of the sugar with an electric mixer fitted with a wire whip and on medium-high speed in a large mixing bowl until the mixture is pale yellow and thick and has tripled in volume, about 8 minutes. Sift the flour, baking powder and salt together in a medium-size mixing bowl. Fold into the egg mixture and blend thoroughly until smooth. Add the vanilla and 2 tablespoons of the butter. Mix gently. Grease a 17 x 12-inch baking pan (or jelly roll pan) with the remaining 2 teaspoons of the butter. Sprinkle with the remaining 2 tablespoons sugar. Pour the cake batter into the prepared pan, spreading it evenly. Bake until the cake springs back when touched, about 15 minutes. Cool for about 2 minutes, then gently flip it out onto a large piece of parchment paper.For the Filling: Combine the egg yolks, cornstarch and 1 cup of the heavy cream in a mixing bowl. Whisk to blend well. Set aside. Combine the remaining 1 1/2 cups cream and sugar in a large heavy-bottom saucepan over medium heat. Whisk to dissolve the sugar and bring to a gentle boil, cooking for about 1
