lettuce leaves - 1 item
oz cream cheese, softened - 6 item
Tbsp apricot preserves - 2 item
c drained pineapple tidbits - 1 item
16 oz cans peach halves, drained - 3 item

How to make peaches and cream:

Beat the cream cheese and preserves in a mixing bowl with an electric mixer until well blended. Stir in the pineapple. Place the peach halves cut side up on a lettuce-lined platter. Fill each half with some of the cream cheese mixture. Garnish with fresh mint if desired. Serves about 15.
