Ingredients/Components

  • snipped parsley - 2 Tbsp
  • chopped green pepper - 1/2 c
  • cherry tomatoes, halved - 1 c
  • cooked corkscrew macaroni
  • reduced calorie creamy cucumber salad dressing - 1/3 c
  • medium cucumber, quartered lengthwise and sliced - 1/2 item

How to make pasta salad:

In a colander, rinse cooked macaroni with cold water; drain well. In a large bowl, combine the pasta and salad dressing. Toss to coat. Add the cucumber, green pepper, onion and snipped parsley to the pasta mixture. Toss gently. Cover and chill for 4 to 24 hours. Before serving, stir in the cherry tomatoes. Makes 4 servings.
