Ingredients/Components

  • sour cream - 1/2 c
  • salt - 1 tsp
  • water - 2/3 c
  • pepper - 1/4 tsp
  • chopped onion - 1 item
  • snipped parsley - 2 Tbsp
  • chili powder - 1 Tbsp
  • chopped green pepper - 1/3 c
  • clove garlic - 1 item
  • shredded Cheddar cheese - 1 c
  • oregano - 1/2 tsp
  • hamburger - 1 lb
  • tomato sauce - 15 oz
  • cumin - 1/2 tsp
  • tortillas - 8 item
  • chopped chilies - 2 item

How to make enchiladas:

Brown hamburger; drain. Stir in onion, sour cream, cheese, parsley, salt and pepper. Cover and reserve. Heat remaining ingredients; simmer 5 minutes, uncovered. Pour into pie plate. Dip each tortilla into sauce; coat both sides. Spoon 1/4 cup hamburger mixture onto each and roll. Arrange in a 12 x 9-inch ungreased dish. Pour remaining sauce over. Bake, uncovered, 20 minutes at 350°. Garnish with shredded cheese, lettuce, onion or lemon wedge, if desired.
