Ingredients/Components

  • butter - 2 tsp
  • heavy cream - 1/4 c
  • Parmesan cheese - 4 8
  • mushrooms, sliced - 4 item
  • garlic, crushed - 2 tsp
  • scallions, chopped - 2 oz
  • bunch broccoli, blanched - 1 item
  • green peppers, julienne - 2 item
  • fettuccine, pre-cooked - 12 oz
  • carrots, cut on a bias - 2 item
  • red peppers, julienne - 2 item

How to make pasta primavera:

Place butter in saute pan. Melt and add carrots, mushrooms, peppers, scallions and broccoli. Saute about 3 to 5 minutes. Once cooked, add heavy cream. Bring mixture to a low boil. Add fettuccine and stir. Add garlic and some of the Parmesan cheese. Stir until Parmesan cheese disappears and then add more cheese. Sauce should be thick, then add seasonings. Serve immediately. Serves 2 to 4.
