- salt - 1 Tbsp
- medium onion, chopped - 1 item
- dry basil - 1 tsp
- ditalini macaroni - 1 c
- dry white navy beans 12 oz - 1 pkg
- leftover spaghetti sauce or tomato puree - 1/4 c
How to make pasta e fagioli:
Prepare beans according to package directions. In large pan, saute chopped onion in a little olive oil. Add beans, spaghetti sauce and basil. Simmer over low heat for 20 minutes. At this point, you can freeze the bean mixture for use later. In boiling, salted water, cook the ditalini. Drain over bowl, being sure to save the water. Combine bean mixture, macaroni and reserved water to make a soup as thick or soupy as you desire.Recipe categories: Lunch/snacks, Soups & stews, Main dish.
