  • sugar - 2/3 c
  • eggs - 2 item
  • salt
  • sifted flour - 8 c
  • warm water - 1 c
  • active dry yeast - 2 pkg
  • scalded milk - 1 c

How to make parker house rolls:

Sprinkle yeast into water; let stand a few minutes. Stir until dissolved. Pour hot milk over one cup of butter, sugar and salt. Cool to lukewarm. Add yeast, eggs and half of the flour. Beat well. Add enough flour to make dough that will not stick to the bowl.

Turn out on a floured board and knead lightly. Put in greased bowl. Cover to let rise until doubled, about 1 1/2 hours. Punch down. Turn out onto board. Roll dough to 1/4-inch thickness. Cut with floured 2 3/4-inch cutter. Make a crease in each circle to one side, center and brush with melted butter. Fold and press edges together. Put on greased baking sheet and let rise until doubled, 30 minutes. Bake in hot oven at 400° for 15 minutes. Makes 50 rolls.
