Ingredients/Components

• eggs - 3 item
• plus 2 Tbsp - 1/2 c
• butter - 3 4
• apple - 1 item
• lemon juice - 1 tsp
• sugar - 2 Tbsp

How to make oven pancakes:

Combine eggs, flour and milk; beat lightly with egg beater. Should be lumpy. Heat butter in 11 or 12-inch cast-iron skillet until foamy. Remove from heat, quickly add batter. Cut apple into 1/4-inch slices, toss in juice and sugar, arrange in pinwheel in pancake before or during baking. Bake 25 minutes or until brown at 425°. Sprinkle with confectioners sugar or jam.
