Ingredients/Components

  • salt - 1/2 tsp
  • evaporated milk - 1/2 c
  • vegetable oil - 2/3 lb
  • all-purpose flour - 1/4 c
  • grated Parmesan cheese - 2 Tbsp
  • salt and pepper to taste - 1 item
  • finely chopped onion - 1/2 c
  • red pepper - 1/4 tsp
  • corn meal - 1/4 c
  • large egg, slightly beaten - 1 item
  • sliced fresh okra - 2 c

How to make okra fritters:

Combine first 9 ingredients. Stir in okra. Pour oil to a depth of 2-inches in a Dutch oven. Heat to 350°. Drop mixture by tablespoons into oil. Cook until golden brown, turning once. Drain on paper towels. Sprinkle with salt if desired. Serve immediately. Serves 4 to 6.
