  • cinnamon - 3/4 tsp
  • eggs - 2 item
  • vanilla - 1 tsp
  • chopped pecans - 1 c
  • granulated sugar - 1 c
  • milk - 3 oz
  • salt - 1/2 tsp
  • flour
  • stick margarine - 1 item
  • brown sugar - 1 c
  • nutmeg - 1/4 tsp
  • coconut
  • baking soda - 1 tsp
  • boiling water
  • margarine - 1/2 c
  • quick oats - 1 c
  • Cream together sugars, margarine, eggs and vanilla

How to make oatmeal cake:

Mix together the quick oats and boiling water and set aside. Cream together sugars, margarine, eggs and vanilla. Sift together dry ingredients and add to creamed mixture. Mix well. Add oatmeal and mix well. Beat at 350° for 30 to 40 minutes in a greased and floured 9 x 13-inch pan.Topping:1 c. brown sugar1/2 c. margarine3 oz. milk1 1/2 c. coconut1 c. chopped pecans Mix together and boil for 1 minute. Pour over cake immediately on removal from oven. Place cake under broiler until bubbly on top and coconut is slightly brown.
