Ingredients/Components

  • cinnamon - 1 tsp
  • eggs - 2 item
  • vanilla - 1 tsp
  • flour
  • stick margarine - 1 item
  • brown sugar - 1 c
  • evaporated milk - 1/2 c
  • soda - 1 tsp
  • boiling water
  • dash of salt - 1 item
  • oatmeal - 1 c
  • white sugar - 1 c
  • Wesson oil - 1/2 c
  • or more coconut - 1 c

How to make oatmeal cake:

Icing:1 c. brown sugar1/2 c. evaporated milk1 stick margarine1 c. or more coconut1 tsp. vanilla Boil water; add oatmeal and set aside. Mix eggs, oil, soda, cinnamon and salt. Add both kinds of sugar. Beat until mixed. Add flour, a little at a time. Finally, add oatmeal and mix thoroughly. Bake at 350° in a 9 x 13-inch pan for 25 to 30 minutes (greased and floured pan).

Icing: Cook sugar, evaporated milk and margarine until a soft ball forms. Let cool and add coconut and vanilla until it is fairly stiff. Icing should not be hard.
