Ingredients/Components

  • cinnamon - 1 tsp
  • eggs - 2 item
  • salt - 1/2 tsp
  • flour
  • brown sugar - 1 c
  • baking powder - 1/2 tsp
  • baking soda - 1 tsp
  • shortening - 1/2 c
  • hot water
  • oatmeal - 1 c
  • white sugar - 1 c
  • raisins to taste optional - 1 item

How to make oatmeal cake:

Pour hot water over oatmeal and let stand for 20 minutes. Cream the shortening, sugar and eggs. Add dry ingredients and oatmeal. Mix thoroughly. Stir in raisins. Bake in greased 9 x 13 pan at 350° for 40 to 45 minutes. Cool and frost with peanut butter frosting.
