No bake stuffed peppers
Ingredients/Components
- sugar - 1 tsp
- salt - 1 tsp
- water - 2 c
- ground beef - 3/4 lb
- basil - 1/2 tsp
- grated Cheddar cheese - 1/2 c
- small onion, chopped - 1 item
- tomato sauce - 1 can
- Minute rice
- medium green peppers - 3 item
- butter optional - 2 tsp
How to make no bake stuffed peppers:
Cut peppers in half lengthwise. Parboil in boiling salted water for 10 minutes. Drain. Add sugar and basil to can of tomato sauce and set aside. Brown beef and onion in large skillet. Stir in 1/2 cup of tomato sauce mixture, 1/4 cup of rice and 1/2 teaspoon salt. Cover and simmer 5 minutes. Stir in cheese. Spoon meat mixture into peppers, place in skillet. Pour remaining sauce around peppers. Cover and simmer 5 minutes. Meanwhile, bring water, 1/2 teaspoon salt and butter to boil. Stir in remaining rice. Cover and remove from heat. Let stand 5 minutes. Serve peppers with rice, top with sauce and cheese. Serves 6.Recipe categories: Vegetables, Main dish, Peppers.
