  • sifted powdered sugar - 4 c
  • margarine - 1 c
  • pecans
  • jar Marshmallow Creme - 1 oz

How to make mississippi mud cake:

Mississippi Mud Frosting:1/2 c. margarine4 c. sifted powdered sugar1/2 c. unsweetened cocoa powder1/2 c. evaporated milk1 tsp. vanilla Grease and flour a 13 x 9 x 2-inch baking pan; set aside. Stir together the flour and cocoa; set mixture aside. In a large mixer bowl beat margarine with an electric mixer on medium speed for 30 seconds to soften. Add sugar and vanilla; beat until fluffy. Add eggs, one at a time, beating well after each addition. Beat in flour mixture. Stir in chopped pecans and coconut. Turn mixture into a prepared pan. Bake in a 350° oven for 35 minutes or until cake tests done. Transfer cake to a wire rack. While cake is still hot, carefully spread with the Marshmallow Creme. Cool cake completely. Frost with Mississippi Mud Frosting. Makes 16 servings.

Mississippi Mud Frosting: In a small mixer bowl beat margarine with electric mixer on medium speed for 30 seconds. Add 1 cup sifted powdered sugar and cocoa powder; beat mixture with an electric mixer on low speed until combined. Beat in evaporated milk and vanilla. Gradually beat in remaining 3 cups powdered sugar.
