Mississippi mud cake
Ingredients/Components
- sugar - 2 c
- eggs - 4 item
- vanilla - 1 Tbsp
- chopped pecans - 1 c
- salt - 1/4 tsp
- flour
- evaporated milk - 1/2 c
- cocoa - 1/2 c
- margarine - 1 c
- miniature marshmallows - 1 size
- pecans - 1 c
- box powdered sugar - 1 item
- cocoa powder - 1/3 c
- Add eggs and beat well
How to make mississippi mud cake:
Cream sugar and margarine. Add eggs and beat well. Sift flour, salt and cocoa together. Add to sugar mixture, mixing well. Fold in vanilla and nuts. Pour batter into a greased 13 1/2 x 9 1/2-inch greased pan. Bake in 300° to 350° oven for 30 minutes or until done. Remove from oven. Place marshmallows evenly over the top of cake and return to the oven for 5 to 10 minutes, just until marshmallows melt. Remove from the oven; cool and frost.Mississippi Mud Cake Frosting:1 1/2 sticks margarine1/2 c. evaporated milk1/2 c. cocoa1 box powdered sugar1 tsp. vanilla1 c. pecans Sift the cocoa and powdered sugar. Add this mixture to the melted margarine. Then add the evaporated milk and vanilla, stirring well. Fold in the pecans. Spread frosting over the cooled cake.
