Mint swirl brownies
Ingredients/Components
- pkg - 1 oz
- butter or margarine, softened - 1/4 c
- sugar - 3/4 c
- eggs - 2 item
- all-purpose flour - 2/3 c
- baking powder - 1/2 tsp
- salt - 1/4 tsp
- chopped nuts - 1/3 c
- sq - 1 oz
- peppermint extract - 1/2 tsp
- green food coloring - 1 item
- Beat in eggs
- butter or margarine - 1 Tbsp
- sifted powdered sugar - 1 c
- vanilla - 1/2 tsp
- boiling water - 2 Tbsp
How to make mint swirl brownies:
Cream together the cream cheese, butter and sugar. Beat in eggs. Stir together the flour, baking powder and salt; stir into creamed mixture. Spoon half of the butter into another bowl. Stir in nuts and chocolate. Drop chocolate and batter from tablespoon in checkerboard fashion into greased 9 x 9 x 2-inch baking pan.To remaining batter, stir in extract and food coloring. Spoon green batter into open spaces in baking pan. Swirl with spatula to marble; do not overmix. Bake at 350° for 15 to 20 minutes. Cool. Pour Chocolate Glaze over top. Cut into servings. Makes about 24.Chocolate Glaze:1 (1 oz.) sq. unsweetened chocolate1 Tbsp. butter or margarine1 c. sifted powdered sugar1/2 tsp. vanilla2 Tbsp. boiling water Melt unsweetened chocolate and butter over low heat; stir constantly. Remove from heat. Stir in powdered sugar and vanilla until crumbly. Blend in enough boiling water until of pouring consistency.
