Mincemeat cookies
Ingredients/Components
- sugar - 1 c
- cinnamon - 1 tsp
- vanilla - 1/2 tsp
- salt - 1/2 tsp
- chopped nuts - 1/2 c
- soda - 1/2 tsp
- shortening - 3/4 c
- sifted flour
- grated lemon rind - 1 tsp
- egg beaten - 1 item
- mincemeat - 1/2 c
How to make mincemeat cookies:
Cream shortening and sugar; add vanilla, lemon rind and egg. Mix well. Sift dry ingredients together; fold into creamed mixture alternately with mincemeat. Add nuts; mix into stiff dough. Form into rolls, wrap in wax paper and store in refrigerator. Slice 1/4 inch thick. Bake on ungreased cookie sheet at 375° for about 15 minutes.
