Ingredients/Components

sugar - 1 c
cinnamon - 1 tsp
vanilla - 1/2 tsp
salt - 1/2 tsp
chopped nuts - 1/2 c
soda - 1/2 tsp
shortening - 3/4 c
sifted flour
grated lemon rind - 1 tsp
egg beaten - 1 item
mincemeat - 1/2 c

How to make mincemeat cookies:

Cream shortening and sugar; add vanilla, lemon rind and egg. Mix well. Sift dry ingredients together; fold into creamed mixture alternately with mincemeat. Add nuts; mix into stiff dough. Form into rolls, wrap in wax paper and store in refrigerator. Slice 1/4 inch thick. Bake on ungreased cookie sheet at 375° for about 15 minutes. Makes about seven dozen cookies.
