  • salt - 1 tsp
  • evaporated milk - 2/3 c
  • chili powder - 1 Tbsp
  • onion, chopped - 1/2 c
  • tomato sauce - 1 c
  • can chili beans - 1 oz
  • corn chips - 2 c
  • can Vegeburger - 1 oz

How to make mexican vegetable casserole:

Combine Vegeburger, milk, onion, green pepper, salt and chili powder in a heated microwave skillet. Cover and cook 3 minutes on full power. Add tomato sauce and chili beans. Mix well.

Line bottom of a 1 1/2-quart casserole with corn chips. Pour in cooked mixture. Cover and bake at full power 8 minutes. Top with remaining chips. Cook for 1 more minute. Serves 4.
