Mexican lasagna
Ingredients/Components
- salt - 1/2 tsp
- egg - 1 item
- garlic powder - 1/2 tsp
- chili powder - 1 Tbsp
- cottage cheese - 1/2 qt
- tomatoes, chopped - 1/2 c
- tomato sauce
- black pepper - 1 tsp
- green onions, chopped - 1/2 c
- corn tortillas - 10 item
- Cheddar cheese, grated - 1/2 c
- cumin - 1/2 Tbsp
- ground chuck
- Mozzarella cheese, grated - 2 c
- lettuce, shredded - 3 c
- black olives, sliced - 1/4 c
How to make mexican lasagna:
Brown ground chuck and drain. Add seasonings and tomato to ground chuck and simmer 30 minutes. Spray a 9 x 13-inch cake pan with nonstick coating and cover bottom of cake pan with tortillas. Spread ground chuck mixture over tortillas. Place tortillas on top of ground chuck mixture. Mix cheese and egg; add cottage cheese. Pour mixture over tortillas. Bake at 350° for 30 to 45 minutes before portioning. Serve with 1/2 cup per serving of olive, lettuce, tomato, cheese and onion mixture.
