  • sugar - 2 c
  • eggs - 2 item
  • vanilla - 1 tsp
  • flour - 2 c
  • baking soda - 2 tsp
  • powdered sugar - 2 c
  • pecans, chopped - 1 c
  • stick butter, softened - 1 item
  • can crushed pineapple juice too - 1 oz
  • Then stir in pineapple, eggs and pecans

How to make mexican fruitcake:

Stir dry ingredients together. Then stir in pineapple, eggs and pecans. Bake in 9 x 13-inch sheet cake pan at 350° for 45 minutes. Cool. Note that there is no oil in this recipe.Icing:8 oz. cream cheese, softened1 stick butter, softened2 c.
