Ingredients/Components

  • pkg - 1 oz
  • milk - 1/3 c
  • flour - 3/4 c
  • eggs, beaten - 2 item
  • cornmeal - 1 Tbsp
  • chopped onion - 1/4 c
  • chili powder - 2 tsp
  • chopped tomato - 1 c
  • 4 oz - 1 c
  • ground beef - 1/2 lb
  • can chopped green chilies, drained - 1 oz
  • pitted ripe olives, sliced - 1/2 c

How to make mexican fiesta pie:

Brown meat; drain. Add onion. Cook until tender. Stir in chili powder. Add cream cheese, chilies, olives and eggs; mix well. Combine flour, milk and eggs. Beat until smooth. Pour into greased 10-inch pie plate or quiche dish. Sprinkle with cornmeal. Spoon meat mixture over batter to within 1/2-inch of outer edge of pan. Bake at 400° for 35 to 40 minutes or until golden brown. Top with tomatoes and Cheddar cheese. Continue baking 5 minutes.
