Ingredients/Components

  • cornmeal
  • cream-style corn - 1 c
  • sour cream - 1 c
  • eggs - 3 item
  • jalapeno peppers, chopped - 2 item
  • green pepper, chopped - 1 Tbsp
  • salt - 1 tsp
  • baking powder - 1 Tbsp
  • grated cheese - 1 c
  • cooking oil - 1/2 c

How to make mexican cornbread:

Mix all ingredients well. Bake in an iron skillet or 9 1/2 x 12-inch baking dish at 350° for 45 minutes. If you use a glass dish, lower oven to 325°. I use a tablespoon or so of pimento to add color.
