  • eggs - 2 item
  • milk - 1 c
  • flour - 1 c
  • oil - 1/3 c
  • chopped onion - 2/3 c
  • ground beef - 1 lb
  • shredded Cheddar cheese - 1 c
  • can cream-style corn - 1 oz
  • corn meal - 2 c
  • jalapeno pepper - 1 item

How to make mexican cornbread:

Brown ground beef with onion and chopped pepper (to taste). Drain. Mix flour, meal, eggs, oil, corn and milk together. Pour 1/2 of batter into greased pan. Layer ground beef mixture, then Cheddar cheese. Top with rest of batter. Bake at 375° for 45 to 60 minutes, until done.
