  • tortilla chips - 1 pkg
  • fryer - 1 item
  • cans Cream of Chicken soup - 2 item
  • can Rotel tomatoes and green chilies, diced - 1 item

How to make mexican chicken casserole:

Cook and bone chicken. Cut or shred meat in small pieces. Line greased 9 X 13 pan with broken tortilla chips. Spread chicken over tortillas. Combine tomatoes with soup. Pour over chicken. Top with cheese. Bake at 350 degrees for 30 minutes.

This can be prepared the night before, refrigerated and cooked when convenient. If preferred, you can substitute one can Cream of Mushroom soup for one of the cans of Cream of Chicken soup.
