  • can Ro-Tel tomatoes - 1 item
  • ground meat - 1 lb
  • can cream of mushroom soup - 1 item
  • salt and pepper - 1 item
  • corn tortillas - 1 pkg
  • can enchilada sauce - 1 item
  • cheese to top layers - 1 item

How to make mexican casserole:

Brown meat and onion; drain. Add tomatoes, soup and enchilada sauce. Layer in large casserole dish the soft tortillas, then meat mixture, then grated cheese. Then end with layers of cheese. Bake at 350° until bubbly, about 35 minutes. Serves 6 to 8.
