Ingredients/Components
- vanilla extract - 1/2 tsp
- salt - 1/8 tsp
- cornstarch - 1 Tbsp
- water - 1/2 c
- egg whites - 3 item
- sugar, divided - 1/2 c
How to make meringue:
Combine 1/4 cup sugar, cornstarch and salt in a saucepan. Stirring constantly, add water and cook over medium heat until mixture comes to a boil. Boil 1 minute; cool completely.Beat egg whites (at room temperature) at high speed of an electric mixer until foamy. Gradually add remaining 1/4 cup sugar, 1 tablespoon at a time, beating until soft peaks form. Add vanilla and cornstarch mixture; beat until stiff peaks form. Yield: meringue for one 9-inch pie.
